Cake

My cake is derived from Clarissa’s grandmother’s cake. It is stellar, and it is not even seriously bad for you.

Preheat the oven to 350 degrees and butter an 8″ springform pan.

2 eggs
2 cups organic sugar (light, not demerara or turbinado)
1 cup plain kefir
1t baking powder
1T olive oil
2 cups whole wheat flour
2T cocoa, and/or 2t vanilla, or 2T grated orange rind, and/or 2t orange juice … or another flavor accent

Beat the eggs and mix in the sugar; blend well. Mix in the kefir, then the baking powder, and then the flour. Mix well. Pour into the pan, and bake for 40 minutes. After baking, let stand at least 12 hours before cutting.

I have not yet tried a glaze on this, but it would be nice with an orange-flavored confectioner’s glaze. It would be interesting to see how it would do made “drunk” (prick it with a fork and pour rum on it), or reconfigured with honey and/or a honey glaze.

I would also like to put fruit in it, for example, a box of blueberries — bake it like that.
